If you need help with retopology in Blender, try Retopo MT, a free add-on created by cwolf3d. It lets you retopologize meshes by drawing lines, now in Blender 4.0, too.
Basically, you just draw a line to make a row of faces and then add more so they stick to each other nicely. It works similarly to the BSurface add-on and can be used together with it, so don't worry about your settings getting messed up.
Enable the plug-in by clicking Ctrl + Shift + Alt + X in the Edit Mesh mode, add some polygons, and create away!
