Fabrizio Espindola, the author of The Unity Shaders Bible and founder of Jettelly, is currently working on The Godot Shaders Bible and frequently shares interesting creations throughout the process. For this particular effect, Fabrizio explained that he discarded pixels within a certain range, then performed ray marching on a plane at the discarded positions, and finally projected a texture array onto it.
This MRI-inspired shader, along with the textures and mesh, should you need half of the crab for your project, is available for free under the CC0 license here.
